Chicken Caesar Pizza - Weight Watchers Freestyle

Yield: 6 servings (5 points per serving for blue, green and purple)

  • 1 cup fat-free plain Greek yogurt
  • 1 cup self-rising flour (It must be self-rising, not all-purpose)
  • 1/4 cup lite Caesar dressing, divided
  • 1 boneless, skinless chicken breast, cooked and chopped
  • 1 cup part-skim mozzarella cheese
  • 2 cups lettuce
  • 1 tablespoon grated Parmesan cheese
  1. Preheat oven to 450 degrees F.

  2. In a medium size mixing bowl, combine the Greek yogurt and self-rising flour. Mix it together, I used my hands.

  3. Sprinkle flour on your work surface. Add the dough and knead it for about 2 minutes, then roll it out.

  4. Spray a baking sheet with no-stick cooking spray and place the dough on it.

  5. Brush on (about 1 tablespoon) lite Caesar dressing. Next add the chicken and mozzarella cheese. 

  6. Bake the pizza 12-14 minutes, or until the cheese is melted and the crust is golden brown. 

  7. While the pizza is baking, chop up the lettuce and mix it with the remaining Caesar dressing. 

  8. Let pizza cool for a couple minutes then add the lettuce to the pizza. Cut into six slices and serve.
