Sausage & Potato Hash

Yield: 2 servings ( 3 points per serving for purple, 5 points for blue and 7 points for green)

  • 4 oz. Jennie O breakfast turkey sausage patties
  • 8 oz. Yukon gold potatoes, cut into small cubes
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped red pepper
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 2 eggs
  1. Spray a non-stick pan with olive oil then add the potatoes, onions, red pepper and garlic. Cook for 7 minutes stirring occasionally.

  2. Push the potatoes to one side of the pan and add the turkey sausage. Break the sausage up into small pieces and cook thoroughly.

  3. Stir the sausage and potatoes together and season with salt and pepper.

  4. Cook the 2 eggs however you like them - sunny side up, scrambled, over easy etc.

  5. Divide the hash into to bowls then top with eggs.
