Yield: 12 mini meatloaves (2 points each for blue, green and purple)

Ingredients
  • 1 lb. 95% lean ground beef
  • 1/2 cup Italian bread crumbs
  • 1 egg
  • 2 garlic cloves, minced
  • 1/2 onion, minced
  • 1 tablespoon skim milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
Instructions
  1. Preheat oven to 350 degrees F.

  2. In a large mixing bowl add the beef, Italian bread crumbs, egg, garlic, onion, skim milk, Worcestershire sauce, salt and pepper. Mix together. 

  3. Spray a muffin tin with no-stick cooking spray. Evenly divided the beef into 12 servings, then add to the muffin tin. 

  4. Bake 25-30 minutes.
