Baked Egg Boat - Weight Watchers Freestyle

  • 1 French baguette
  • 4 eggs
  • 2 tablespoons skim milk
  • 2 turkey sausage links (cooked), chopped
  • 2 tablespoons green peppers, chopped
  • 2 tablespoons onions, chopped
  • 1/4 cup reduced-fat Mexican cheese, divided
  • 1/8 teaspoon garlic powder
  • Salt and pepper, to taste
  1. Preheat oven to 350 degrees F.

  2. Whisk together the eggs and milk in a mixing bowl. Add the sausage, green pepper, onion, 1 tablespoon Mexican cheese, garlic powder, salt and pepper. Mix it all together. 

  3. Remove the top, middle portion of the French baguette. Be careful not to cut out too much or the eggs will spill out. 

  4. Add the scrambled egg mixture to the bread boat. Sprinkle the remaining cheese on top. 

  5. Bake 30-35 minutes or until the eggs are set. Let it cool for 5 minutes before cutting.
