Sausage & Potatoes

Yield: 4 servings (3 points per serving for purple, 6 points for blue and green)

Ingredients
  • 4 chicken sausage links (I used Simple Truth Italian Sausage), cut into 1/2" slices
  • 1 lb. Yukon gold potatoes (peeled and cut into small cubes)
  • 1/2 yellow onion, sliced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
Instructions
For the air fryer:
  1. Add the sausage, potatoes and onions to a mixing bowl. Spray with olive oil then add the garlic powder, Italian seasoning, salt and pepper. Mix together.

  2. Add half of the mixture to the air fryer. Cook at 400 degrees for 10 minutes stirring halfway through. Remove from air fryer and repeat with the remaining ingredients.

For the oven:
  1. Preheat oven to 400 degrees F.

  2. Add the sausage, potatoes and onions to a mixing bowl. Spray with olive oil then add the garlic powder, Italian seasoning, salt and pepper. Mix together.

  3. Spray a baking sheet with olive oil and add the sausage and potatoes. Bake for 20 minutes stirring halfway through.
