Open-Faced Philly Cheese Steak Sandwich

Yield: 4 Open-faced sandwiches (3 points each for blue, green and purple)

Ingredients
  • 1/2 green pepper
  • 1/2 small onion
  • 5 oz. Boar's Head roast beef
  • 2 mini bagels
  • 1/4 cup part-skim mozzarella cheese, shredded
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon black pepper
Instructions
  1. Slice the green pepper and onion into long, thin pieces.

  2. Spray no-stick cooking spray into a frying pan and cook the green pepper and onion until somewhat tender, about 5 minutes. Remove from the pan and set aside.

  3. Cut roast beef into thin pieces. Add to the frying pan and sprinkle with garlic powder and black pepper. Cook on low until the roast beef is warm.

  4. Lightly toast the two mini bagels.

  5. Place the mini bagels on a baking sheet.

  6. Divide the roast beef into four and add to the bagels.

  7. Next, add the green pepper and onion.

  8. Finish off with the cheese and place under the broiler until the cheese is melted
