Green Bean Fries

Yield: 6 servings (2 points per serving for blue and purple, 3 points for green)

Ingredients
  • 1 lb. fresh green beans, washed and trimmed
  • 2 eggs, whisked
  • 1/2 cup Panko breadcrumbs
  • 1/2 cup Italian breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • olive oil spray
Instructions
  1. Whisk together the eggs in a bowl.

  2. Add the Panko breadcrumbs, Italian breadcrumbs, garlic powder, onion powder and salt to a bowl and stir together.

  3. Line a baking sheet with parchment paper or aluminum foil.

  4. Set up the assembly line - green beans to the left, then the eggs, breadcrumb mixture and baking sheet.

  5. Dip the green beans into the egg, followed by the breadcrumb mixture, then place onto the baking sheet. Repeat until all of the green beans are used.

For the air fryer:
  1. Place the green beans into the air fryer in a single layer (you might have to do more than one batch). Spray with olive oil spray and cook at 400 degrees for 5 minutes. Turn the green beans half way through and spray again with olive oil spray. Serve immediately.

In the oven:
  1. Preheat oven to 400 degrees F.

  2. Spray green beans on the baking sheet with olive oil spray. Bake for 10 minutes. Turn the green beans half way through and spray again with olive oil spray. Serve immediately.
