Baked Oatmeal Bars - Weight Watchers Freestyle

Yield: 9 Servings (2 points per serving for blue and green, 1 point per serving for purple)

  • 4 tablespoons PB2 Powdered Peanut Butter
  • 3 tablespoons water
  • 2 overripe bananas, mashed
  • 1 1/2 teaspoons vanilla extract
  • 1/4 cup sugar-free maple syrup
  • 1/2 cup skim milk
  • 1 egg
  • 1 1/2 cups quick cooking oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 mini sugar-free Hershey's dark chocolate bars
  1. Preheat oven to 350 degrees F.

  2. In a large bowl add the PB2 Powdered Peanut Butter and water. Mix together until it is a smooth consistency.

  3. Add the bananas, vanilla extract, egg and sugar-free maple syrup. Mix together with the peanut butter. Then stir in the milk.

  4. In a medium bowl add the quick cooking oats, baking powder, salt and cinnamon. Mix together.

  5. Add the oat mixture to the batter mixture and stir thoroughly.

  6. Spray an 8×8 pan with no-stick cooking spray.

  7. Pour the oatmeal mixture into the pan and bake for 30 minutes.

  8. Remove from oven and let cool for 10 minutes.

  9. Melt the sugar-free chocolate in the microwave then drizzle onto the oatmeal bars.
