Pizza Egg Rolls

Yield: 10 egg rolls (4 points each for blue, green and purple)

  • 10 egg roll wrappers
  • 10 tablespoons pizza sauce
  • 2 1/2 cups part-skim mozzarella cheese, shredded
  • 30 slices turkey pepperoni
  • zero point vegetables such as green pepper, onion or mushrooms
  1. Lay out the egg roll wrapper. In the center add 1 tablespoon of pizza sauce, 1/4 cup cheese and 3 pepperoni. Add any additional vegetables at this point too.

  2. Dip your finger in water and run it along the edge of the egg roll wrapper. Roll up the egg roll by folding up the bottom, followed by the sides, then roll the rest of the way up. Repeat until all 10 pizza egg rolls are made.

For the air fryer:
  1. Place egg rolls in a single layer in the air fryer. Spray them with olive oil spray. Cook at 400 degrees for 6-7 minutes flipping halfway through.

For the oven:
  1. Preheat oven to 400 degrees F.

  2. Place the egg rolls on a baking sheet and spray with olive oil spray.

  3. Bake 7 minutes flipping halfway through.
