Chicken Bacon Ranch Taquitos

Yield: 8 taquitos (3 points each for blue and purple, 4 points each for green)

Ingredients
  • 4 oz. reduced fat cream cheese (room temperature)
  • 1 teaspoon ranch seasoning
  • 1 cooked chicken breast, chopped
  • 2 slices center cut bacon, cooked and chopped
  • 2 tablespoons chopped green onions
  • 2 tablespoons reduced-fat Mexican cheese, shredded
  • 8 corn tortillas
Instructions
  1. Mix together the cream cheese and ranch seasoning. Add in the chicken, bacon, green onions and Mexican cheese and stir together.

For the air fryer:
  1. Preheat air fryer at 400 degrees for 3 minutes.

  2. Lay out a tortilla and fill the center with the cream cheese mixture. Tightly roll up the tortilla and place it in the air fryer seam side down. Repeat with the remaining tortillas.

  3. Spray the tortillas with olive oil spray. Set the air fryer to 400 degrees and cook for 6 minutes.

For the oven:
  1. Preheat the oven to 425 degrees F.

  2. Lay out a tortilla and fill the center with the cream cheese mixture. Tightly roll up the tortilla and place it on a baking sheet seam side down. Repeat with the remaining tortillas.

  3. Spray the tortillas with olive oil spray. Bake 11-13 minutes, once the tortillas are golden brown.
