Gnocchi with Sausage

Yield: 6 servings (7 points per serving for blue, green and purple. Each serving is approximately 1 heaping cup)

  • 1 teaspoon extra virgin olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 12 oz. Jennie O turkey sausage patties
  • 16 oz. gnocchi
  • 1 (14.5 oz.) can petite diced tomatoes
  • 1/2 teaspoon Italian seasoning
  • 1/3 cup chicken broth
  • 3 cups baby spinach
  • 1/2 cup part-skim mozzarella cheese, shredded
  • Salt and pepper, to taste
  1. Heat the oil in a large non-stick skillet. Add the onion and garlic. Stir for 1 minute.

  2. Add the turkey sausage to the skillet and break it up into bite size pieces. Cook until browned then add the gnocchi.

  3. Add the diced tomatoes (with the juice) and chicken broth. Stir together and cover. Cook on medium heat 5 minutes.

  4. Add the spinach and cook until it is wilted. Turn off the heat then sprinkle with mozzarella cheese and cover until the cheese is melted. Add salt and pepper to taste.
