Tomato Basil Chicken

Yield: 4 servings (1 point per serving for blue and purple, 3 points for green)

  • 14 1/2 oz. fire roasted diced tomatoes
  • 8 oz. tomato sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon fresh basil, chopped
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons reduced fat cream cheese
  1. Add the fire roasted tomatoes, tomato sauce, garlic, onion powder, salt and pepper to a slow cooker and stir together. Add the chicken breasts and cover with the tomato mixture.

  2. Add the fresh basil. Cover the slow cooker and cook on low 4 hours.

  3. Remove the chicken breasts then add the cream cheese. Whisk together until the cream cheese melts. Add the chicken back in.

  4. Serve over noodles, rice or riced cauliflower. Add additional points if you use noodles or rice.
