Spinach Pie

Yield: 9 servings (3 points per serving for blue, green and purple)

  • 15 sheets phyllo dough, defrosted
  • 20 oz. chopped spinach, thawed and drained
  • 1 teaspoon butter
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 2 eggs
  • 2 teaspoons parsley
  • 1 teaspoon dill
  1. Preheat oven to 350 degrees F.

  2. Melt the butter in a pan. Sauté onions until translucent then add the garlic. Sauté an additional minute then remove from heat.

  3. Add the spinach to a mixing bowl. Then add the eggs, dill, parsley, onions, salt and pepper. Mix together.

  4. Spray a 7x11 or 9x9 pan with olive oil spray. Add one sheet of phyllo dough then spray the sheet of phyllo dough. Repeat four more times.

  5. Add the spinach mixture and evenly spread it out.

  6. Add a sheet of phyllo dough and spray with olive oil spray. Repeat 9 more times.

  7. Bake in the oven 35-40 minutes.
