Sweet Potato Chips

Yield: 2 servings (1 point per serving for purple, 4 points per serving for blue and green)

Ingredients
  • 1 medium sweet potato, peeled
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt
  • Olive oil spray
Instructions
For the air fryer:
  1. Preheat air fryer at 350 F for 4 minutes.

  2. Run the sweet potato through a mandoline. You want the slices to be thin.

  3. Put potatoes in a bowl or baggie. Spray with olive oil then add the brown sugar, cinnamon and salt. Mix the potatoes up.

  4. Put potatoes in the air fryer in a single layer (you will have to do more than one batch). Cook for 9 minutes flipping half way through.

For the oven:
  1. Preheat oven to 350 degrees F.

  2. Run the sweet potato through a mandoline. You want the slices to be thin.

  3. Put potatoes in a bowl or baggie. Spray with olive oil then add the brown sugar, cinnamon and salt. Mix the potatoes up.

  4. Put potatoes on a baking sheet lined with parchment paper. Make sure they are in a single layer.

  5. Bake for 20 minutes, flip then continue baking 20 minutes or until the potatoes have a nice golden color.
