Yield: 8 (1/4 cup) servings - 2 points for purple, 3 points for blue and green

  • 1 1/2 cups rolled oats
  • 1/4 cup almonds
  • 3/4 teaspoon cinnamon
  • 2 tablespoons granulated Splenda
  • 1/4 teaspoon salt
  • 2 tablespoons honey
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon vanilla extract
  1. Preheat oven to 325 degrees F.

  2. Roughly chop the almonds. Add the almonds, rolled oats, cinnamon, Splenda and salt to a large mixing bowl. Mix together.

  3. In a separate bowl add the honey, oil and vanilla extract. Stir together then pour over the oat mixture and stir thouroughly.

  4. Line a baking sheet with parchment paper. Pour the granola onto the baking sheet and spread out. Bake for 20 minutes stirring half way through.

  5. Remove from the oven and let cool completely.
