Yield: 4 servings (9 points per serving)

  • 8 oz. Linguine noodles
  • 1/4 cup reduced fat peanut butter
  • 2 tablespoons reduced-soduim soy sauce
  • 2 garlic cloves, minced
  • 2 tablespoons water
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon granulated Splenda or other sugar substitute
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground ginger
  • green onions (optional)
  1. Cook linguine noodles according to the directions on the box. Drain.

  2. Add the peanut butter, soy sauce, garlic, water, rice vinegar, Splenda, sesame oil and ginger to a pan. Whisk together over low heat. Once the peanut butter is melted and the sauce is smooth toss in the noodles. Serve and sprinkle the green onions over top.
