Course: Salad
  • 1/4 head of iceberg lettuce (make a wedge)
  • 1/4 cup plain, fat-free Greek yogurt
  • 1 teaspoon extra virgin olive oil
  • 1/2 teaspoon minced garlic
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon dill
  • Salt and pepper, to taste
  • 2 tablespoons reduced-fat feta cheese
  • 1/2 cup cherry tomatoes, cut in half
  • 1/2 cup English cucumber, chopped
  • 1 tablespoon red onion, chopped
  1. Mix together the yogurt, olive oil, garlic, lemon juice, dill, salt and pepper.

  2. Place the iceberg wedge on a plate or bowl. Pour the dressing over the wedge, then add feta cheese, tomatoes, cucumber and red onion.
