Cheesy Zucchini Rounds

Yield: 24 (2 cheesy zucchini rounds is 2 points with blue, green and purple)

  • 1 zucchini, sliced
  • 2 oz. reduced-fat cream cheese, room temperature
  • 1/4 cup part-skim mozzarella cheese, shredded
  • 2 tablespoons Parmesan cheese, shredded
  • 1/8 teaspoon garlic powder
  • Salt and pepper, to taste
  1. Preheat oven to 400 degrees F.

  2. Spray a baking sheet with no-stick cooking spray. Add the zucchini slices and season with salt and pepper.

  3. In a small bowl mix together the cream cheese, mozzarella cheese, Parmesan cheese and garlic powder. Stir until combined.

  4. Top each zucchini slice with about 3/4 teaspoon of the cheese mixture. Bake for 10 minutes.
