Boneless Buffalo Wings

Yield: 4 servings (approximately 10 boneless wings per serving - 2 points per serving for blue and purple, 5 points per serving for green)

Ingredients
  • 2 boneless, skinless chicken breasts
  • 2 eggs
  • 1/2 cup Italian breadcrumbs
  • 1/2 cup buffalo wing sauce
Instructions
  1. Cut chicken breast into 1" pieces.

  2. Whisk the eggs in a small bowl. Put the Italian breadcrumbs in a second small bowl. Dip each piece of chicken into the eggs, then breadcrumbs. Place chicken on a baking sheet.

For the oven:
  1. Preheat oven to 400 degrees F.

  2. Spray the chicken with olive oil spray and bake for 10 minutes. Flip all of the chicken pieces, then cook 7-10 minutes.

  3. Add the chicken to a large bowl then pour the wing sauce over it. Shake the bowl until all of the chicken is coated in wing sauce.

For the air fryer:
  1. Preheat air fryer to 375 degrees.

  2. Place chicken pieces in the air fryer basket in a single layer and spray with olive oil spray. You might have to cook the chicken in two batches.

  3. Set the time for 15 minutes, flipping the chicken half way through.

  4. When the chicken is done cooking add it to a large bowl and pour the wing sauce over it. Shake the bowl until all of the chicken is coated in wing sauce.
