Easy Tuna Bowl

Yield: 1 serving (1 point for purple, 4 points for blue, 5 points for green)

  • 1/2 cup brown rice, cooked
  • 3 oz. solid white tuna in water
  • 1/4 cucumber
  • 1/2 cup carrots, shredded
  • green onions
  • 1 tablespoon light mayonnaise
  • 1 tablespoon sriracha
  • 1/2 teaspoon sesame seeds
  1. Add the cooked rice to a bowl.

  2. Drain the water from the tuna then add the tuna to the bowl.

  3. Slice cucumbers, then add them to the bowl. Also add the carrots and green onion.

  4. In a small bowl mix together the light mayonnaise and sriracha. Pour over the other ingredients, then add the sesame seeds.
