Buffalo Chicken Quesadilla

Yield: 2 Quesadillas (6 points per quesadilla for blue and purple, 10 points per quesadilla for green)

  • 2 small boneless, skinless chicken breasts, cooked and shredded
  • 1/4 cup buffalo wing sauce
  • 1 oz. reduced-fat cream cheese (room temperature)
  • 2 oz. part-skim mozzarella cheese, shredded
  • 2 Ole Xtreme High Fiber Tortillas
  1. Pre-heat a frying pan over medium heat.

  2. Add the chicken, buffalo wing sauce, cream cheese and mozzarella cheese to a bowl and stir to combine.

  3. Add half of the chicken mixture to one half of a tortilla. Fold the top over, then repeat with the second tortilla.

  4. Heat the quesadillas 3-4 minutes on each side. Optional: serve with fat-free sour cream and chives.
