Yield: 8 Veggie Cakes (2 veggie cakes per serving = 1 point for blue, green and purple)
Add the zucchini, carrots and riced cauliflower to a mixing bowl. Add the rest of the ingredients and stir together.
Spray olive oil cooking spray to a heated frying pan. Use 1/4 measuring cup to scoop up the veggie mixture and add to the frying pan. You should get 8 veggie cakes.
Cook for 3 minutes, then flip and cook for 3 more minutes.
Optional: serve with sour cream.
