Pulled Pork Nachos

  • 1 Ole Xtreme Tortilla
  • Salt, to taste
  • 1 serving leftover pulled pork

  • Red onion, chopped
  • 1/4 cup reduced-fat Mexican cheese, shredded
  • Cilantro
  • 1 tablespoon fat-free sour cream
  • 1 tablespoon sugar-free BBQ sauce
  1. Preheat oven to 350 degrees F.

  2. Cut the Ole Xtreme tortilla into "chip" size pieces. Spray both sides with no-stick cooking spray and season with salt. Bake 7-9 minutes, or until they are crispy.

  3. Add the tortilla chips to a baking dish. Top with the pulled pork, red onions and Mexican cheese. Bake for 10 minutes, or until the cheese is melted.

  4. Mix together the sour cream and BBQ sauce.

  5. Let the nachos cool for a minute, then add the creamy BBQ sauce and cilantro. Enjoy!
