Ingredients
  • 1 1/4 Ole Xtreme high fiber tortillas
  • 1 Hash brown patty
  • 2 eggs
  • 1-2 tablespoons diced ham
  • 1 1/2 tablespoons reduced fat Mexican cheese, shredded
  • Salt and pepper, to taste
Instructions
  1. Cook the hash brown patty in the oven, stovetop or air fryer.

  2. Add the eggs to a small bowl and whisk together, then add the ham.

  3. Spray a heated pan with olive oil and add the eggs and ham. Once cooked set them aside.

  4. Lay out the whole tortilla. Top it with the cheese, then hash brown patty.

  5. Add the scrambled eggs and ham then top with the piece of tortilla. Fold up the bottom tortilla one section at a time until it's folded up.

  6. Place in a heated pan that's been sprayed with olive oil, seam side down. Cook for 2 minutes on each side, or until the tortillas is golden and crunchy.
