Copycat Chipotle Chicken Burrito Bowl

Ingredients
  • 1 lb. boneless, skinless chicken breast
  • 1 cup jasmine rice, uncooked
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Juice from one lime
  • 1/2 cup cilantro, chopped
Optional toppings:
  • Corn, lettuce, Pico de Gallo, avocado, cheese, black beans, onions, sour cream, Greek yogurt, black beans (doublecheck points if using these ingredients)
Instructions
  1. Cook the rice in a rice cooker or according to the directions on the package.

  2. While the rice is cooking add the ground coriander, cumin, chili powder, salt, black pepper, garlic powder and onion powder to a small bowl. Add to both sides of the chicken.

  3. Cook the chicken 4-5 minutes on each side in a grill pan.

  4. Add the lime juice and cilantro to the rice, stir together.

  5. Assemble the bowls by adding 1/2 cup of rice and 1/4 of the chicken to four bowls. Add any additional toppings.
