Grinder Salad Sandwich

Ingredients
For the dressing:
  • 1 tablespoon light mayonnaise
  • 1 tablespoon fat-free sour cream
  • 1 teaspoon red wine vinegar
  • 1 tablespoon red onion, chopped
  • 3 banana pepper slices
  • 1/2 teaspoon oregano
  • 1/8 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/2 cup iceberg lettuce, sliced
For the sandwich:
  • 1 Aunt Millie's mini sub bun (scrape the inside out until the bun is 1 1/4 oz.)
  • 2 oz. Boar's Head cooked ham
  • 12 turkey pepperoni
  • 1 slice part-skim mozzarella cheese
Instructions
  1. In a small bowl mix together the light mayonnaise, fat-free sour cream, red wine vinegar, red onion, banana pepper slices, oregano, garlic powder, salt and pepper.

  2. Add the iceberg lettuce and mix together.

  3. Cut the sub bun in half. Add the ham and turkey pepperoni to one side and the mozzarella cheese to the other side.

  4. Put the sub on a baking sheet and place under the broiler until the cheese is melted and the meat is heated through.

  5. Add the salad mixture to the sub plus any additional toppings.
