Cobb Salad

Ingredients
For the salad:
  • 3 cups romaine lettuce, chopped into bite size pieces
  • 1 boneless, skinless chicken breast, cooked
  • 1 slice center cut bacon, cooked and chopped
  • 1 hard boiled egg, sliced
  • 1/2 avocado
  • 1/2 cup cherry tomatoes, cut in half
  • 1 tablespoon red onion, chopped
For the dressing:
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon water
  • 1 teaspoon red wine vinegar
  • 1 teapoon Dijon mustard
  • Salt and pepper, to taste
Instructions
  1. Add the romaine lettuce to a salad bowl.

  2. Cut the cooked chicken breast into bite size pieces and add to the lettuce.

  3. Add the bacon, egg, avocado, cherry tomatoes and red onion.

  4. In a small bowl add the oil, water, red wine vinegar, Dijon mustard, salt and pepper. Mix it together then pour over the salad.
