Yield: 12 servings (4 points per serving for blue, green and purple)

Ingredients
  • 1 Pillsbury thin crust pizza dough
  • 1/2 cup fat-free half and half
  • 1 tablespoon flour
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1 1/2 cups part-skim mozzarella cheese, shredded
  • 1/2 yellow squash
  • 1/2 zucchini
  • 1/4 red onion
Instructions
  1. Preheat oven according to the directions on the pizza dough.

  2. In a small saucepan add the half and half and whisk in the flour. Stir in the garlic powder and salt. Cook over a medium-low heat until it starts to simmer and thicken, then remove from heat.

  3. Lay the pizza dough out on a baking sheet and bake for 6 minutes.

  4. Slice the zucchini, squash and red onion.

  5. After the dough has prebaked evenly spread the sauce on top. Then add the cheese, zucchini, squash and red onion.

  6. Bake 6-8 more minutes, until the cheese is melted and the crust is golden.
