Split Pea Soup - Weight Watchers Freestyle

Ingredients
  • 2 lbs. dried split peas
  • 6 cups fat-free chicken broth
  • 2 cups water
  • 1 bay leaf
  • 1 small onion, chopped
  • 2 ribs of celery, chopped
  • 2 carrots, chopped
  • 2 medium potatoes, chopped
  • 2 cups ham, diced (I used Kroger brand which equaled 4 points)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 2 teaspoons horseradish
  • salt and pepper, to taste
Instructions
  1. Add chicken broth, water, dried split peas, ham bone or ham hock and bay leaf to a large pot. Bring to a boil then lower heat and simmer for one hour.

  2. Remove ham bone. At this point, I usually add another cup of water since the peas absorb a lot of the liquid.

  3. Use a hand-held blender to create a smooth texture.

  4. Add the onions, celery, carrots, potatoes and ham. Also add the Worcestershire sauce, parsley, basil, Italian seasoning and horseradish.

  5. Bring to a boil then lower heat and simmer for one hour or until vegetables are cooked through.
