Baked Onion Rings - Weight Watchers Freestyle

Ingredients
  • 1 sweet onion
  • 2 eggs
  • 1/4 cup panko bread crumbs
  • 1/4 cup Italian bread crumbs
  • No-stick cooking spray
Instructions
  1. Preheat oven to 425 degrees F.

  2. Line a baking sheet with parchment paper.

  3. Peel onion and slice into 1/2 inch thick rounds.

  4. Add eggs to a small bowl and whisk together.

  5. In another small bowl add the panko and Italian bread crumbs. Mix them together.

  6. Dredge each onion slice in the egg, then the bread crumb mixture and place on the baking sheet. Repeat until all of the onion rings are done.

  7. Spray the onions with no-stick cooking spray.

  8. Bake for 7 minutes, then turn over the onion rings and bake 7 minutes or until golden brown.
