This bubble up casserole was the perfect dinner for what was a crazy day. Nothing makes me happier than a good casserole for dinner.
My day was full of stress. I had to go to the Secretary of State office, then the Social Security office, then back to Secretary of State.
And I’m not done! I have to go back tomorrow. To top it all off my garage door wasn’t working.
I went to open it and it only went up about 5 inches. Then it wouldn’t close. I would push the button, it would close, then go back up 5 inches.
Well guess what….5 inches is enough room for a bird to come into the garage. I went out to the fridge in the garage to grab a water and this bird goes flying by me.
It scared the crap out of me!! I frantically ran back into the house trying to make sure the bird didn’t get in the house. Luckily, it didn’t.
The bird is now free. I was able to get the garage open and he flew away.
I don’t have a good history with birds so I’m happy he is gone!
Having this tasty bubble up pizza casserole for dinner was just what I needed.
There are a few things I did to lighten up this recipe. To start with I used turkey sausage instead of regular sausage.
I also used turkey pepperoni instead of regular pepperoni. If you haven’t tried turkey pepperoni you really should.
I thought they might be kind of weird, but they are just like regular pepperoni. My daughter actually prefers turkey pepperoni now.
Another way I reduced the points was by making my own sauce. It really doesn’t take much to throw together a quick sauce. I always prefer to have something homemade vs. being store bough.
I cooked this casserole in an 8×10 pan and divided it up into 8 servings, which made it 7 Freestyle points per serving.
The great thing about this recipe is you can add whatever pizza toppings to it that you like. I usually mix in onions and green peppers. Mushrooms are good too.
I like adding any extras that are 0 points. Make sure to double check the points of this recipe based on the ingredients that you use.
Yield: 8 servings (7 points per serving for blue, green and purple)
- 12 oz. turkey sausage (I used breakfast patties that I broke up)
- 15 oz. tomato sauce
- 1/2 teaspoon dried minced onion
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 6 oz. Jumbo Junior Biscuits (I used Kroger brand – which was 5 biscuits)
- 8 oz. part-skim mozzarella cheese, shredded
- 15 turkey pepperoni
Preheat oven to 350 degrees F.
Add the turkey sausage to a medium size pan. Break it up and cook it all the way through.
Drain any liquid from the turkey, then add the tomato sauce and all of the seasonings. Heat this until it begins to simmer, then turn off the heat.
Cut each biscuit into 8 pieces, then add them to the tomato sauce. (You can also add veggies to this mixture.)
Spray an 8×10 baking dish with no-stick cooking spray, then add the sauce mixture.
Sprinkle the mozzarella cheese on top, then add the pepperoni.
Bake for 30 minutes. Enjoy!
