I had so much fruit in my house the other day, I had to find a way to use it. I didn’t want my blueberries and blackberries to go to waste.
Not too long ago I made a strawberry cobbler and it was delicious! I added some fat-free Reddi Wip to it and I was in love. And it was only 2 Freestyle points per serving.
So, I figured I would give it a try using blueberries and blackberries. I’m so happy I did! I actually like this cobbler even more.
This mixed berry cobbler is only 2 Freestyle points per serving. Since it’s so low in points I added some vanilla ice cream to it.

I used 1/4 cup of Halo Top vanilla ice cream, which was only 1 additional point.
My dessert was only 3 points!
Another good thing about this cobbler is it is very easy to make. I used 1 pound (total) of blueberries and blackberries. I added the berries to a mixing bowl and added 1 tablespoon of Splenda.
I sprayed an 8×8 baking dish with no-stick cooking spray and added the berries.
In another mixing bowl I added self-rising flour, skim milk, Splenda and vanilla extract. I mixed it together until it was combined but still had some lumps.
I poured the batter evenly over the berries. Next, I added 1 tablespoon of butter on top of the batter and berries.
Even though it was only 1 tablespoon of butter, I was able to cut it into 18 pieces.
The hard part is waiting for it to bake. Mine took 45 minutes until it was nice and golden brown. I took it out of the oven and let it cool for 5 minutes. Then I sliced it up and added my ice cream.
Yield: 9 Servings (2 points per serving for green, blue and purple)

- 1/2 lb. blueberries
- 1/2 lb. blackberries
- 1 cup self-rising flour
- 1 cup skim milk
- 1/2 teaspoon vanilla extract
- 1/2 cup plus 1 tablespoon granulated Splenda
- 1 tablespoon butter

Preheat oven to 375 degrees F.

Slice the berries and add them to a bowl. Sprinkle with 1 tablespoon granulated Splenda and mix together.

Spray an 8×8 baking dish with no-stick cooking spray then add the berries.

Add the self-rising flour, skim milk, vanilla extract and 1/2 cup granulated Splenda to a mixing bowl. Stir together until it is combined, but still slightly lumpy.

Pour the batter evenly over the berries.

Cut the butter into small pieces and put on top of the batter.

Bake 45 minutes then let cool for 5 minutes.
