“Fried” Pork Tenderloin – 2 SmartPoints

This may not be the prettiest meat to look at, but what it lacks in beauty it makes up for in taste! This is one thing that my kids love to eat. It’s such a good feeling when you’re making dinner and nobody complains about it.

In my house we call this recipe “flat pork”. Nothing else needs to be said. They know exactly what I’m making when I say flat pork. We’ve also gotten into the habit of eating angel hair pasta with it. The picture above is what I had for dinner. I had 3/4 cup of angel hair pasta (4SP), 1/4 cup spaghetti sauce (2SP) and one piece of flat pork(2SP). My meal was 8 SmartPoints and it was very filling. If I was really hungry I would probably have less pasta and one more piece of pork instead.

Fried Pork Tenderloin

Yield: 7 Servings (One piece of pork per serving is 2 SmartPoints)

Ingredients:

  • Pork tenderloin, 1 lb.
  • 1/2 cup flour
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Directions:

  1. Mix together flour, garlic powder, onion powder, pepper and salt. I put the flour mixture in a pie pan.
  2. Trim any fat off of the pork tenderloin. Cut tenderloin into one inch medallions.
  3. Place one medallion in between 2 pieces of plastic wrap. Use a meat mallet to pound pork flat to about 1/4 inch.
  4. Heat oil in a large skillet over medium heat.  Dredge each piece of pork into flour mixture making sure both sides are covered in flour. Place in skillet and cook 4 minute. Flip the pork and cook 4 minutes on the other side (or until fully cooked).
